With a beautiful gold colour with green reflects, the Chablis got a powerful nose, iodine and fresh, floral and mineral characterized by notes of almonds, fresh chestnuts, agrums and white flowers.

White peach flavours brings the minerality out.
The aging potential is between 4 and 8 years, and maybe more… Age will makes it spicier and more gold.

It can be appreciated during its youth on a fish terrine or grilled fishes. It will match perfectly with oysters.
It will also be a good pair with goat cheeses, Beaufort, Comté or Emmental.

Alcoholic and malo-lactic fermentation are done with wild yeasts between 20 et 22°C, followed by an aging of 12 months in stainless steel on lees.
The movements and inputs are limited to the bare minimum in order to guarantee an authentic terroir taste.
