Temperature of service between 10 and 14°C.
It will pairs perfectly with poached oysters, scallops, sweetbread, white meats and fishes.
Alcoholic and malo-lactic fermentation are done with wild yeasts between 20 et 22°C, followed by an aging of 15 months in stainless steel on lees.
The movements and inputs are limited to the bare minimum in order to guarantee an authentic terroir taste.
